I have an empty 3.7 gallon AIO that used to hold my betta. I was wondering if it was feasible to make a coral tank with just CUC in it.

Yes, aslong as you can get enough flow in there. If not, Scrap the corals, throw some macroalgae in there and keep a small fish like a clown goby
I am getting a pump that goes 60 to 120 GPH. I didn't know I could put a clown goby in a tank this small. :) Might have to also check macroalgae. Here it is with sand and more live rock. I took them from my torn down 20 gallon. I rinsed the sand really well and ran the dry rock in hot water to get the salt crystals dissolved.

Yeah you do have some options for pico fish; redhead gobies, clown gobies, hector gobies, pygmy coral crouchers, etc. just make sure you only get one fish
