I'm looking at the PRUSA Mini . Looking for something in the mid-range that is beginner friendly. Good choice? any other recommendations?

I have no experience with the Mini, but if you're looking for beginner friendly that will print excellent almost out of the box, then Prusa is the way to go.

I have the MK3S+ and love it.

my choice was the Prusa mini or the Ender 3 S1 . While the Ender is bigger i opted for the Prusa due to the good reviews. Now I wait as the Prusa can only be ordered thru their website in the Czech Republic. Lead time is 2-3 weeks for the Mini. I should have it around Christmas

Prusa printers are excellent and easy for beginners. My brother has the i3 MK3S and it is a workhorse.
Hopefully the Mini+ is good for a while, though I would have recommended making the upgrade to the i3 MK3S since there is more build volume. This is the reason I am awaiting delivery on my pre-ordered Prusa XL: bigger build volume means less limitation on part sizes and available orientations of parts as well as ability to print more smaller parts at once. Granted, the XL is not cheap.

I do like the bigger build volume. This printer will be my learning machine before I go deeper . Very excited as I have lots of parts I want to print
My backlog of parts to print is already longer than I may ever get printed, and the ideas just keep going!

After 4 weeks of waiting, PRUSA finally ships my 3D Printer. Can't bloody wait to start printing a ton of reefing gear. If i had known it was 4 weeks of waiting I would of gotten the Ender 3 S1 Pro. Be prepared for a long wait if you want a PRUSA lead time is now 5-6 weeks yikes.

I think I waited 3 months for my MK3 a few years ago.

I tried the Benchie as my 2nd print but 1st layer adhersion didn't go too well.

3rd print i tried the tree frog using a brand new spool of Prusa jet black pla filament. So far so good. Hoping to improve my skills and make them better as i progress.

I picked up IPA 91% to clean the PEI sheet and was finally able to complete a benchie . Apparently this little boat is the 3d Printer benchmark. I think i am good to go
