Jr'sReef, what kind of pellets are you using? I don't like a smokey taste to my steaks. I tried pork chops one time and we threw them out because we could taste to much smoke.

Not a pellet guy, but I like apple wood for pork. I find other woods overpowering. I think beef can hold up to a stronger smoke.

I am currently using hickory mixed with apple about 50/50. One of the features I like about the traeger or most pellet grills is that it’s not just a smoker. It can be used as a grill or an oven and more. So for these steaks I’m setting it at 400 and grilling them 6min, flip, 6min, flip, and 6min remove. It cooks them evenly and not over powered by the smoke but does give it a nice juicy and flavorful taste.
The Traeger Gourmet pellets are really good too. If you are not into heavy smoke flavors, try apple, cherry, maple or alder. Those are really mild but still gives it that wood fire flavor you seek. Once you find one you like then you can start mixing in some hickory or oak etc to balance them out

I'm guess I'm just weird with my smoke flavor. Love it in brisket, pulled pork and ribs. If I taste a smoke flavor in anything else I don't like it.

Here are some burger I made yesterday left two with a Worcestershire rub and the right two with a chipotle rub. Topped with a garlic, onion, herb butter. [emoji1419]

I got an offset I love to smoke things on. I have some venison I "harvested" (killed) last season; gotta make some room in the freezer for the upcoming season. Going to try smoking a roast of that tomorrow, I think it should turn out pretty great. I love smoking wings and ribs.

Jr those burgers look great!

We are starting the weekend off on a different note. Saturday we are frying catfish, maybe some trout, crawfish tails and shrimp with homemade frys for the side. May do some fried broccoli also.

Glad it’s the weekend! Got a rack of beef short ribs and couple racks of St. Louis on deck. Pics to come.

I was able to pick up a double pack of beef short ribs at Costco today. They had them in the little kiosk thing with the expensive beef and seafood. It was $5.19/lb so around $50 for the pack. I sure hope this is good, never had them. They also had another kind of beef short ribs that was $9.99/lb. and it was already cut into individual bones. Also picked up a prime brisket at $3.19/lb. Not the cheapest it has been but not a horrible price. Going to go and pickup some baby back ribs tomorrow morning or may go with St Louis since that seems to be what everyone has on sale for the weekend.

I'm beginning to think no one actually works in the Dallas area. I've been off the last 3 days and traffic at 2pm is as bad as rush hour traffic. I've never seen Costco so full as I did when I went around 2pm today. I thought I was going to have to park at the Home Depot next door.

St Louis style ribs are done when they hang at a 90 degree angle.
