It was wing night.
smoked with applewood.Made the sauce by simmering garlic in butter and adding Texas Petes wing sauce. Finished with fresh grated Parmesan.

Nicely marbled picanha, made a giant pocket that I stuffed with [pan fried] mushrooms, onions, jalapenos, smoked turkey. Added cheese to the stuffing. Closed the pocket with bamboo skewers. Cooked on a Big Green Egg at 300F with apple wood (very mild smoke flavor). Came out insanely good.

Some shots from yesterday! Finished the chicken on the grill and served with Alabama white bbq sauce. Only bummer was I had no chipotles, so I couldn't make my favorite mustard based sauce for the pork butt :(

That mushroom saute looks insanely good! What else when into that besides the 'shrooms, onions and jalapenos? I gotta make that, even as a side dish!

yep, my wife just ate the stuffing! In terms of ingredients, mushrooms, onions, garlic, jalapenos, smoked turkey breast (just regular store bought deli cut, chopped). Add your favorite seasoning, but at a minimum, salt, pepper, paprika. Also, we were out of bacon, but chopped bacon is another excellent addition to this. Thats all! Like you mentioned, even standalone without picanha, this side dish is amazing. if stuffing, just add cheddar cheese as well.

Made another brisket yesterday. Did not come out so great. I’ve been using Traeger signature pellets since I pick it up at Home Depot. I had picked up. Bag of mesquite last time I was there and used that. Smoker kept having temp swings anywhere from 25 to 75 degrees. When I used the signature pellets it was consistent. Has anybody else had this problem?

Nope, I've never had the problem of having to use a Traeger. :p ;Troll

I'm not sure why the pellets would make a difference. Could the grill need cleaning? Could something be blocking the feed auger?

Wish I could offer insight. I've never come across dusty pellets. Not sure if they would have an impact or not.
