The tenderloin and striploin are part of the shortloin When a shortloin is cut you have T bone stakes facing the head of the cow and porterhouse steak on the back end. Out of a short loin the tenderloin and striploin are yield after de boning. Tenderloins are tender and just have a silver skin where as a striploin has more silver skin and tissue to butcher a long with a fat cap. A good brisket will be the same price range as a striploin but the striploin will require less time to cook for tenderness. The break down of a cow

I'm hitting Disney in a few weeks. Does the Orlando area have a killer BBQ place to check out?
A little bit outside of Disney but you need to check out 4 rivers! Definitely has good BBQ!

How did I not see this thread until now? This last year has been great for smoking a ton!
I've got two old Traegers (90s) from when they were still made in Oregon, a GMG Daniel Boone and my wife got me this for my early birthday in October ! MAK 2 star

Cooked a delicious brisket last weekend.

250 Whiskies & 150 Tequilas, Lots of outdoor seating, Smoked Gator we cooked for Father’s day last year.

That’s a completely different operation. We just have one location, getting ready to open a second here in VA.

Getting ready to open our second location this Spring. It’s a 60 acre farm that we’ve turned into a Brewery, Distillery, and BBQ Restaurant called Flying Ace Farm. This is in Lovettsville, VA.
