I probably could just google it, but so much good knowledge here I figured to start here. Will a female change to male?

Yes they do and it's always nice to get them female and watch them switch abd develop till terminal male colours as well as integrate within the wrass population in the tank.

Yep, they most definitely will in almost all instances. Another advantage to starting with females is they tend to last longer as they're younger, usually.

Yup, many wrasses will go from Female to Male in an aquarium setting. I don't have any fairy wrasses but I am hoping my Melanurus becomes male and my Blue Star Leopard as well.

I bought a flame wrasse female for less than $100 bucks a few months ago. She's now a he and getting more colorful every day. Every time I see that $549 price tag on the male on DD right now I smile.

I bought an exquisite fairy as a female but have since been told (based on photos) that it was actually an immature male. Either way he has morphed from dull and boring to amazing.
