Nitrites should stay at 0, or near it, of their own accord once the tank is cycled. Generally no need to test for them in a cycled tank.
For most tanks, I would say you should have a more accurate test kit than the dip strips. For a tank with nothing but hardy soft corals, a dip strip nitrate test might be fine, since all you need to know is that you have at least 5ppm. I don't know what that is in mg/L.
