How do you get the right food particle size?

For those that make up their own food, what do you use to get "just the right sized" food particles?

I do not make my own, but to make it more fine I am sure you could just blend it up to the amount you are looking for!

LOL, the problem with the blender (besides the over spray) is controlling how fine it gets. I prefer it more like couscous than a Slurpee.

Since I'm using this thread in a contest entry I might as well post this which works really well for me. Some frozen seafood bits and some pounding and I end up with "small gravel" sized fish food.
