Ever seen a clown/harlequin sweet lips?
Still good looking as an adult, but nowhere near their juvie colors:

There are also plenty of angels that have similar transitions. And then on freshwater, there is a prime example - Distichodus sexfasctiatus:

And a similar story with high fin banded sharks:

The Chevron Tang is the story of the ugly duckling in reverse. Starts off as arguably one of the most stunning fish we could keep, but loses what it has going for it as it gets older. Give me an adult yellow eye any day.

the adult looks psychodelic.. but still cool imo

I think the mimic looks great as it gets older. That was the reason I got one
I've heard they're better in person but I've only seen pics of adults and I personally don't care for them. Care to share a pic of yours, maybe you can change my mind. I almost bought one once until I saw the adult pic.

Orange line chromis. Cute when small but just turn dark blue/black when older and become stupid aggressive. Im ready to make a spear gun out of toothpicks to get these things out of my tank.

I don’t think I’d ever seen a photo of one as an adult before, but now that I have I’m sorely tempted to put it on my future stocking list. I’ve never been a huge fan of the bright yellow on fish, but I actually really like that muted yellow of the adult.

Mine is still in transition, otherwise I would. I do see an adult at my LFS that looks great.

Blackmouth chromis. Yellow and black striped little guys and big ugly black with yellow tails as the are adults.
Meaner than a junk yard dog.

I have a Mimic tang, and as an adult it looks "sick" red streaks around the gills I believe are intended as a warning to not eat it. However, if you look at the acanthurus family, you have a bunch of butt heads, I'm looking at you Clown, Achilles, Powder Brown/Blue... My Mimc tang is just assertive enough to keep the other aggressive tangs in check.

A healthy Mimic tang looks very nice, that's a bad picture of it on LiveAquariua. Mine is a nice brown, with a yellow flashy tail like my Blue throat trigger.
