Just wondering what the Light spread of photon v2+ is in the Z direction? Like would I need 2 wide on a 36x36x18H cube?

On their site under "Additional Information" for each fixture it recommends the spread of all axis. Though you may be looking for actual user results.

I've looked at that last picture with the par values a million times... totally missed the coverage area right below it

Optimally they will cover 24" front to back. Beyond that we typically recommend a second row or adding lumenbars depending on the kind of corals you plan on keeping. For a 36" cube, 2 x Photon 24-V2+ will fit the bill very nicely for a mixed reef, 2 32s will handle an sps dominant tank easily.
