I saw this picture online and I am wondering the technique used to get cap montiporas to look like this. Any hints?

That just looks like monticaps exhibiting their normal growth patterns of spiraling. I would suspect they placed a couple of small frags near to each other and they are just intertwining their spirals.

If you wanted to put your finger on the scale and try to get them to form a complimentary spiral, you could glue a small frag of a different colour in the middle of a larger monticap and wait for it to start to shade the one below it and form it's own spirals. Then when large enough, repeat the process with a different colour for the next layer, etc.
