Killed everything but my watchmen goby. I’m curious how long I need to wait until adding new fish? I think ich lives for 21 days is that right?

If there is a host, such as that watchman goby, then the answer is that the tank still contains ich and anything you put in it is at risk of getting ich. You might want to do some more reading on ich- you need to control the tomont and theront stages in addition to the trophont stage.

O you can remove the Goby and wait 76 days for the tank to be clean but will need to treat the Goby in a separate QT tank before adding him back as if you don’t treat him you will just reintroduce inch to the tank after you waited all that time for nothing.

It can feel like it, but think about the long term. You QT and treat your goby, and leave the tank fallow for 76 days, then you do a prophylactic QT of future fish, and you'll never have to worry about most diseases again.
