Struggling with my cycle. Help!

I started my tank on 7/21.

By started, I mean, I got the right salinity, close to the right temp, and added Turbo Start 900. What I didn't do was add any fish or other source of ammonia. doh!

I figured out that I screwed this up and got some Dr. Tim's ammonia and added 2.5ml to the tank for 3 days in a row. (7/31 to 8/2)

These are my testing figures.

1. I am wondering if I stalled my cycle at one point and then started it with the addition of ammonia?
2. Do my current numbers show I'm cycled?
3. Should I do a water change to bring down the nitrates before I add fish?
4. If I don't add fish right away, will the nitrifying bacteria go dormant?
5. What is the best PH test? (I have Salifert for ammonia, no2 and no3, and I have Hanna testers for Phosphate, Alk, and salinity with the n03 arriving tomorrow)

Thanks in advance for answering the same noob questions that have been answered a hundred times.

This cycle is done and ready
Change water, can begin
To save types I'd rather link our big thread to convey testing issues, ways that multiple dosings can cause alerts unfounded etc

The cycle was done due to the fritz component it works fastest and then all others are compounds for being ready

Digital ammonia kits would give a different reading than above.

You don't need a full water change just a partial is fine because that's our habit. There's nothing toxic about the current water anyway if you want to skip it and just go.

Another reason you're cycled: folks add fish on day one to that mix, and tracked on digital meters it's always fine. You're days wait past that method
