Should I check levels daily to begin with, I assume? Vinegar would be the 'safest' form of organic carbon?

Vinegar or vodka are good bets, or a mix of them. I prefer vinegar for reasons of widespread usage in marine organisms, but it does lower pH so large doses once a day are not optimal. Either neutralize it with calcium hydroxide to have no pH drop (and add as little calcium and alk), or dose multiple times through the peak pH times of the day.

Thank you. I'll read up on dosages for a vinegar and calcium hydroxide mix.
