once they jumped out of the tank onto my arm. I think I have hundreds of not thousands of them in there

they are amphipods, a natural food source for your fish like wrasses to hunt for. They eat detritus/leftovers and maybe a bit algae and phyto in the tank

Since they are on the algea that you put in the tank, my guess would be they're eating algea. Unless they're on the glass behind the algea sheet, in which case they're probably still eating some algea just off of the glass

As already stated little scavengers that will eat anything. A good sign of a maturing tank.
