Hello, I'm thinking about building some platforms for my aquascape to keep detritus and such from accumulating under my rock scape. I will be building them out of acrylic and was curious about what would be the best reef safe glue, cement or epoxy to use to achieve this?

weld-on is probably the most popular brand. something around the consistency of #16 is probably the easier to work with if your new to making acrylic structures. it's more like a syrup where a #4 would be more like a water consistency.

Weld-on cements work very well. I used it to build a sump years ago. I think that I used the #4 and it was very hard to work with, so #16 would probably be a better choice. Whichever you use make sure that you use them with a respirator as they contain methylene chloride which is very bad for you.
