Deep sand bed for sea grass display

I'm planning a Mediterranean themed display tank. Having dived many times on my annual trips to Sicily, I've fallen in love with the neptune grass meadows. I'd like to recreate that look, but with more rock structure for for my snowflake eel. I've heard a lot of negative talk about DSBs, particularly in the display where they get shaded by rocks and stirred up by fish (just like my snowflake does). I'm wondering if it's really worth the risk of a deep sand bed, for the benefits (mainly aesthetic but also ecological) of sea grass.
