Understandably, nuclear grade is the top tier of di resins. But next up is a high purity semi conductor resin I believe.

What is the most noticeable difference going to be if I use high purity SC instead of using nuclear grade?

I have the ability to get Aldex high purity SC mixed bed resin. And wondering what would be any disadvanges.

The issues relate to the chance of various sorts of impurities to be present in the material at the start, and hence the chance of those impurities being released. I do not think we have need of especially clean and pure di resins or water.
