I have a mixed reef (with some acros) Red Sea Reefer-S 1000 with (4) MP60s, but they seem to be producing way too much flow even when turned down to 30% max (Reefcrest). The minimum of these pumps appear to be around 3,600 GPH.

I am thinking of going to MP40s or back to Tunze.

Roger, what would you recommended as the ideal Tunze setup/pump placement for my tank... with an unlimited powerhead budget?

I would use 2 6105 Eco Streams, they use hardly any power, run very quiet and will max out at about 3200 gph. They are generally the right size pump for this size system.
