Tank "reset" tips

I'm in the process of planning a tank reset. I'm going to convert my 300 gallon reef to a FOWLR.

My plan right now is to first, siphon out all of the sand and then start draining the tank and removing rocks/corals. Once the water level is very low, catch out all of my fish. I have a 150 gallon rubbermaid tub to keep the fish that will be transferring over to the FOWLR, mostly tangs. The rest of the fish will be moved to a temporary tank while I get them rehomed.

Rubbermaid tub will have some rocks from the tank, two XL sponge filters, cycled media, and a heater. The fish will be in there for a week max.

Anyone have any tips, and does my process sound okay? The reason I'm taking down the whole tank is because I want to re-do my rock work, I don't like my sand choice, and a lot of my small fish are basically impossible to catch without taking out the rocks and draining the tank.
