I don't know if this is valid or not but the only time I had an ammonia spike is when my DI resin was exhausted on my RODI system. My city water has chloramines not chlorine in it. So I was breaking the chlorine-ammonia bond (which makes chlorine chloramine) and there was still ammonia left over.

You have the proverbial canary down the mine shaft. Meaning I see that you have a Scarlet Skunk Cleaner Shrimp in the tank which tends to make me believe you have no ammonia.

Have you checked nitrites? And lastly nitrates.
