My wife & I lived in London for 3 years, and it was the most amazing time of our lives. Would do anything to go back and live there permanently.

Go for it but there are much better places than London :-)

Can't. It's next to impossible to get a work permit for non-EU nowadays. Hopefully Brexit (if it ever happens) will lead to a more friendly visa program between the US & UK. London is where I've always dreamed of starting my business.
