Anyone make sushi?

Short grain rice works/taste great.
True, Arborio will work in a pinch, but there is nothing like the real stuff. Light, tender, and just stick enough to hold.
 
I am also a culinary artist for a living I am a meat market manager for a grocery store been doing it for almost 16 yrs or so :)
 
I’m a culinary eater! Although I don’t much care for sushi, I do enjoy making it. My bride and I took a class at her favorite sushi joint and had a blast. As a school teacher, she actually did a tutorial for her class and so took some pictures during our first try. We use whatever rice the lady at the Asian market tells me to and add vinegar and a little sugar. They sell soft-shell crabs and tempura batter - need I say more? Here's a few shots in no particular order! You'll quickly discover why I'm a culinary eater vs. artist!






 
I use vodka and Cane sugar, with a touch of lime juice. The vodka to cool the rice. I also use king crab for my California rolls IMG_2858.JPG

Don't ask how, but I totally missed your post/pictures. YUMMO!!!!!! Those look crazy good.
 
@dbl try more of a square instead of round when wrapping with the bamboo mat it helps to kinda squeeze it all together. But looks great nonetheless :-)

You know what the kicker is, my best friend is Japanese and hates Japanese food. No fair!
 
Actually, she's a victim of her culture. Her family was poor and she was the girl. She often didn't eat as the men/boys came first. She came here by herself as a teenager, not speaking a word of English. She hates everything Japanese.

I want Sushi and she wants to go to Five Guys & Fries. :-/
 
Is a sushi knife nice to have? I know it's not necessary, but would it be nice to have one?
 
I happen to have a nice chef's knife and just use that. Sushi master from class taught us to keep the knife wet while cutting the rolls. Seems to work just fine.
 
Between every cut, I rinse and wipe the blade and then wet it again before cutting. I use a typical Santoku type knife that I keep super sharp..... super suture giving sharp :) I could see how a sushi knife would be nice though, in that they are long and don't have a lot of height, reducing drag. The single bevel sounds like it would make for a nice sharp knife.
 
I'm half Japanese, love the Traditional Japanese Cuisine, not big fan of the California Rolls and this line. Too much avocado in everything.
 
I usually only eat ebi, but I like raw salmon and shrimp roe as well [emoji4]

We usually used Japonica rice but now all I can find in the supermarkets here are the Thai "Jasmine Fragrant Rice" and Indian Ponni Rice, so we just stuck to Ponni whenever making sushi. Taste is not really there but hey it's sushi [emoji39]

Curious if I'm the only one who dunks my sushi in the soy sauce, yes or no?
