What do you folks use to seal your tank and keep it waterproof??

Do you mean stand....not tank.

If that is the case, I like using Kilz as the primer and a good exterior latex as the top coat.
 
Ideally the exterior of a stand wouldn't be exposed to much water. Any conventional sealing method would work. alkyd prime/paint, acrylic/prime paint, shellac prime paint, stain/poly, conversion varnish, oil, et cetera. The higher the sheen value, the easier the finish will be to wipe down and keep clean.
For the interior of the stand I wouldn't want any sheen less than semi gloss. I would also choose the finish that created the hardest film once dry. Alkyd based if you don't mind solvent or acrylic if you do.
 
I painted my entire stand inside and out with Exterior paint and am in the process of covering the outside with FRP panels.
From panels??
 
FRP is Fiberglass reinforced Plastic you can get it at Lowe’s and Home Depot or lumber yards.
It’s the wall panels you see in commercial kitchens and bathrooms. It will hold up to almost anything.
