What I want to do is to have my awc turn on at 9am and turn off at 10am and change 1 gallon of water. The catch is I would like to have
1. Return pump turn off during the change (eb8 outlet)
2. Dos stating the water change 15 seconds after the return shuts off
3. If my salt bin low level sensor is open then dos will not change water
4. Return pump will turn on when dos water change stops
5. If salinity probe reads 36 then dos will shut off

I don’t know where to even begin

First and foremost, the highest volume of liquid you can physically move through a DOS is 1.3 gallons per hour. Second, since you also want to physically control the DOS, you'll need to utilize the power adapter it comes with and plug it into an outlet. Something along these lines.
..........

Return Pump (EB outlet; add the following to your existing configuration)
If Output <dos name> = OFF Then OFF
Defer 001:00 Then ON
..........

DOS (EB outlet)
Fallback OFF
Set OFF
If Time 09:00 to 09:59 then ON
If <sailinity probe> 36.0 Then OFF
If <salt bin sensor> OPEN Then OFF

* Then you need to define the DOS schedule for that DOS head by having it start at 09:01 am and stop at 09:58am and pump 3785ml (1 gallon).
..........

1. Yes, if DOS (needs to be on EB outlet) is ON then return pump is OFF.
2. 1 minute, but close enough.
3. Yes, will stop the DOS and turn the return pump on after 1 minute.
4. Yes, will turn on 1 minute after the DOS is turned off.
5. Yes, DOS will stop - return pump gets turned on after 1 minute.
