For the reefers that live down under.....

I will be in Sydney at the end of January after seeing New Zealand....any ideas of places/stuff to see besides Ayers rock....maybe a cruise/flight to Cairns and the coast line...I was told of a company called PNO....have a week to kill and don't know where to go?

Ideas please.....would like the non-touristy if possible places...
