It doesn’t really explain any of those measurements. Plus, I’m eager to know if anyone actually DOES anything based on these? For example, my Redox was 200 a few weeks back. Now it’s near 400.

Salinity is your Conduct. (S) 1 probe, ORP is redox, temp and pH are as named. That ORP/redox reading is typical for a new probe as they "break in." T he link recommends not trying to control ORP.
