Whats the difference in the grey PVC and regular white PVC? My tank was already plumbed but they used white PVC. Is there a difference.

Grey PCV is schedule 80, meaning it's rated for higher pressure, thicker material and better uv resistance where as white is usually schedule 40 which is thinner and rated for less pressure non uv resistant. The PSI rating will vary by manufacturer, but generally for reef tanks white schedule 40 works great

The grey pvc is SCH 80 so has thicker walls and is designed for higher water pressures. White is SCH 40 or SCH 20. They are interchangable with the fittings but SCH 80's smaller inside diameter will restrict water flow more.
