Once I get water in the tank, it will be tough to fix any leaks on the unions since it will be against the wall.

How hard to tighten schedule 80 unions? Hand tighten really hard, or use a tool to tighten?

Do not use a tool, hand tighten. You don't need to really crank on it either, just nice and tight. Over tightening damages the o-ring and could lead to premature failure.

Agreed, hand tighten. Over time the O rings lose elasticity and flatten out. Best to replace them rather than torque down on the union.
