After you finish your cycle, is there a time limit you need to follow to put fish in? Or if there is a delay in getting fish, do you need to redose ammonia?

I would say, if the cycle is truly done, go ahead and get one fish in there. Get your tank used to handling some nutrients and start the journey to stable parameters.

Is there a time line where if I’m waiting for fish to come in the mail after QT that I should add more ammonia?

Oh, sorry, I misunderstood. You could do that, just don't go overboard. You could also just occasionally add a little food to the tank ("ghost feeding").
