Jumping shrimp

My peppermint shrimp for months now has been hiding but in the past few days is super active. Even splashing water out if the tank. Any idea what might cause him to freak out all of a sudden? All my fish are acting fine.

Mine goes into hiding when they molt(changing skin) for few days and then back to normal stealing food and hitch hiking the fish. Maybe u have a fish how is trying to eat it like puffer. Eel or wrasse
