Bathroom paint will resist moisture and mold from shower humidity unlike normal interior latex paint which shouldn't get wet. Newer bathroom paints can be low gloss and look like normal interior latex.

This might sound crazy for an old home but if the flippers did all that work, with the siding they may have done a new moisture barrier wrap and your home may be "too" sealed up. Newer homes are built so tight and sealed so heavily that they have to have a whole house ventilation system running to prevent mold. I'm dead serious, look it up.. now is that likely with your house? Probably not but I wouldnt rule it out.I bought the house from flippers. They redid all the siding on the outside new carpet on the inside new paint the full 9. But I am sure they did not use the best paint they could have.
They did a good job with the house, but, at the same time, there is lots of room for improvement. From the home inspection I had done, they did not wrap the house. As it is, there is no, and I mean zero insulation in the crawl space under my house. When it gets in the low 30s, I can feel the cold air coming from the groundThis might sound crazy for an old home but if the flippers did all that work, with the siding they may have done a new moisture barrier wrap and your home may be "too" sealed up. My house was from a flipper. They were smart enough to use proper paint to conceal problems. Aaron88's problem seems to be isolated near the tank...Something you may want to think about also, since the house was flipped, the mold may have been there to begin with and just covered up with a fresh coat of paint. Flippers tend to cover up problems to make things "look good" as opposed to actually fixing the problems.
While I do not live in the moist NW, I have never had any mold issues from water evapping from a tank. But it tends to be very dry here in the NE, except in summer when the windows are open, which negates the issue all together.
Might want to seriously consider a dehumidifier also.
Yeah. Mold is no joke. Be safe. Mold showing up on walls near the tank doesn't sound like flipper cover up though. If it was me I would do the following in order and see if it comes back after every attempt
1-Try a fancy mold killer carefully
2- buy a dehumidifier with a drain pump
3- have a mold specialist come look at it.
4- do whatever the expert says lol
What is a PIV?Here in Scotland I had the same issue and installed a PIV unit in my hall. Solved the problem almost overnight. No more mould, dripping windows and damp. Worked so well I now have one in my office where I also have a tank.

Positive input ventilationWhat is a PIV?
I will need to google what that isPositive input ventilation
I live in a fire season area and the smoke here can get really bad. Will this unit filter out a large amount smoke out before bring it into the house?I tried everything mentioned here trust me. Dehumidifiers in my experience are reasonably loud and expensive to run. Since installing these Nuaire PIV units our house is clear of multiple problems and the air is just fresher in general. We opted for the units that also heat cooler air when required just to take the edge off. They also stop running when the loft space equals the temp in your house. I wouldn’t be without them now.
