So a friend of mine is giving me 3 clown fish currently in his tank with very high nitrate. And I need to move them to my system with near 0 nitrate. How is this best done?

The nitrate level will have no effect on fish.
Acclimate as usual.

So salinity and temp are the main things.

Yup.
Many people (including me) don't drip acclimate fish at all.
Just make sure temp and salinity match, then transfer the fish right over.
Avoids exposing the fish to toxic ammonia building up in the bag for any longer than necessary.
