I just upgraded from a 75 to a 125 gallon tank. I have a Reef Octopus BH-100 skimmer that works great, but probably isn't big enough for 125 gallons. Can I add a small 2nd skimmer, or do I need one bigger unit?

Since it’s the total amount of water processed a second skimmer will work.
If it will fit?

Do you have a sump with the 125 or are you still going with hang HOB skimmer?

IMO I doubt a 2nd skimmer is going to be all that viable, if sized correctly it will probably be smaller and therefore sit too low in the sump, so you'd likely have to build it a platform to sit on for it to work correctly.

If you have a large enough sump Id get a reef Octopus classic 150. That’s what I have on my 125 tank great value and reliable

I should have specified no sump!! Plenty of room for another job, though.

I would jump to a used BH-2000 if you can. make sure its with the newer AQ-2000 punp and not the older OTP pump.

As surprising as this is to me guess I’ll be the first to say your skimmer will work better, be more consistent and produce better skimmate if slightly undersized.
Would stick with your skimmer and see how it performs

It's working great, dark scum in the collection cup, but I worry that water quality will suffer. Bad things seem to happen fast, but I would love to keep what I have.
