So I've seen people put a saddle valentini puffer and a blue spot puffer in the same tank. I thought you couldn't mix puffers?? Or is that only true with the larger puffers?

I'm no puffer expert but very very generally speaking most fish that don't like their own kind will be better with something of their own kind that doesn't exactly look like them. I've had a blue and a yellow boxfish together just fine.

Puffers can be kept together as long as there is adequate space.

I have a valentini and blue spotted puffer together in a 75g reef. The blue spotted puffer is much larger than the valentini, but have no issues with them being together. The blue spotted will occasionally lunge at the valentini when it gets too close to him, but never chases him and never makes contact.

Whats considered enough space for the bigger species? ie porcupine puffer. 300g, 700g, 1000g+?

In a 180g+ you can mix large puffer species.

I don’t know about mixing puffers but I had a valentini puffer and he became my favorite fish, so much personality and really fun to watch. :)
