Questions on tank set up

After i cycle my new 30 gallon tank for about 2-3 weeks is it okay that i add a few shrimp...only if the water is testing good of course? Should i put my old live rock into the new tank?? Or buy new all together? We are buying fresh salt water from our boss...even tho we can technically get our own :) could we get wet sand from the beach and use it in the new tank? Thats what we did with our current one...even the water thats in it is from us getting buckets full from the crystal clear beach 30 min from our house...is that okay? I mean nothing in our tank ever minded the sand or the water .....infact everything seems to enjoy the water...the only thing is the salinity is kinda high but we balance it out with RO water.

You can add a shrimp once the cycle completes.

You can add your old rock, but is it still live? there are precautions you'll want to take.

Buy a spectrapure rodi so you can control the quality.

Do NOT collect anything from the beach/ocean and put it in your tank. first, it could be illegal. second, you never know what kind of nasties could be in the sand. and depending on where you're located, the livestock could be temperate.
