I hate my rock structure. Nothing is glued together, rocks fall occasionally, and it's not as aesthetically pleasing as it could be. I don't want to break down my tank entirely, though but redo my Aquascape by pulling out the rock, giving my corals to my aquarist or LFS, and keeping only my fish. Then, put the new rock structure in the tank, immediately. Mind you, I have some rock in my sump and will try to keep as much rock in the tank as possible to protect filtering.

Is this terribly inadvisable?. If you were to do it, how would you proceed?

As my corals grow or show aggression I rearrange live rock; probably should be careful not to stir up too much detritus, etc. when you move things around. Corals will be fine in a separate container of water while you redo your aquascape in most cases.
