Serpent Star has lost all his legs and is just the body with little nubs sticking out.

So I screwed up and didn't acclimate my Serpent Star properly and just put him into this new tank I set up. 2 days later I noticed his legs starting to break off slowly in little bits and pieces. He now looks like a throwing Star. He won't eat and is barely moving. Should I just wait it out and hope he recovers or should I go ahead and euthanize him. Any advice would help please.

Starfish commonly get these bacterial infections in their legs, and they drop off. If it spreads to the center he's toast (he may already be toast by the sounds of it).

Its is an awkward place where I can't get a pic of him, looking at him he is litterly just the middle disc/body with a nub of about 1/4 inch on each leg

Not sure where you're at with your tank, you said "New tank I just set up" assuming you've cycled before adding it. If you did, and there's no other livestock, remove the legs (if you haven't already) and wait it out...
