I currently have my temperature probe in my sump. My sump light is on 24/7 for the cheato. Do you think it would be more beneficial/accurate to have my temperature probe in the external overflow instead of in the sump?

No, water temp is water temp. There should be no difference between you tank water temp and your sump water temp.

I keep mine inside my tank where I have plenty of water flow. I do this just in case my return pump were to fail the water in ur overflow and sump my get cold but the tank water will get hot do to lights and power heads. With my controller I have lights and power heads cut off if tank temp gets over a certain temp.
