Will a Green Bird Wrasse, eat turbo snails , or Striped Hermit Carbs , which are the big hermits. And also will he eat smaller fish?

Usually fish are safe from being eaten, though bird wrasses can be semi aggressive. Inverts though, are sure to be on the menu.
 
I have a pair which leave everything alone except snails. Doesn't touch any other fish or inverts.

When they got full grown in the Long Island Aquarium, they started eating small fish.

Also be mindful that this is a big species; nearly a foot at maturity.
