Those that make frozen food

For those of you that make frozen food, what sort of storage life are you getting? From google, it looks like lean fish will only keep for six months? I need to figure out how big of a batch to make.
 
Well you can call it i make my own food but technically all I do is mix bribe shrimp 20% mysis 70% and nori 10% cut in small bite size pieces. Thaw portions in a bowl just enough to mix well along with little bit of garlic paste then I scoop them in Shallow ice trays. I make about two to three trays at a time. I use one Ice Cube per day which pretty much feeds 3 times a day.
I noticed after few days the top of the Ice Cube starts to get dry so what I do is after the cubes have Frozen I pour a little bit of RO water on top of it so it gets an extra layer a freezing water on top and it does not dry out the shrimp underneath.
Three trays will last me about 2 months. But I'm sure it can last six seven months easily.
Flat packs that I buy bacon last in the freezer for atleast 1 yr once opened.
