Yes, if the monti is touching a rock, and its stable (not moving in the flow), then it will encrust.

Considering that monti likes high flow position, it might be hard to set it down on a rock and it will not move.

This might be a dumb question but I have a monti sitting between two pieces of rocks without any glue.

Will it encrust?
I regularly mount Monti frags on small pieces of AF rock(hate frag plugs!) & wedge between established rock work.they quickly encrust over so you should be fine :)
