That would be a pretty easy family night recipe

So I have to admit, I had a sandwich for dinner. Nothing fancy, just a sandwich.

Ok, the bread was homemade by my daughter this morning so that's a little fancy - a no-knead, overnight, 24 hour bread.

She cut me two think slices and made me a grilled cheese, so nothing fancy.

Ok, maybe a little fancy - she roasted some red peppers to put in the grilled cheese.

And a little fancier - she put a slice of Colby Jack and a slice of cheddar and then some laughing cow between each cheese slice and the bread.

So I have to admit, I had a sandwich for dinner. Nothing fancy, just a sandwich.

And here I was all happy with my white bread, craft American cheese , grilled cheese hospital sandwich!!

That would be a pretty easy family night recipe

I dunno, I love me some Mac and Cheese mixed with a can of baked beans.

I'd say make the Mac and cheese, add some queso sauce, some sour cream, a few splashes of Tapatio... Then top it with some seasoned ground beef or grilled strips of seasoned steak or chicken, some refried beans with green chilies, grilled peppers (sweet and hot both!), some shredded cheese, and salsa! Serve it over some crushed tortilla chips (or mix it in the Mac and cheese if you want soggy chips I suppose or even better, toss some on top) and add some grilled onions and avocado or guacamole for those of you that enjoy those things. Also some cubed/diced tomatoes if you enjoy them.

That's just a casserole. I'm talking Mac and Cheese tacos. A tortilla folded in half loaded with a creamy, cheesy Mac and cheese. Top it with some chicken and chilies for more flavor.
