We did keto for several years. It does get easier as time goes on. We stopped keto years ago but still limit our bread intake to the occasional sub/hero/grinder/hoagie.

Does Keto take that long?

I didn't do Keto, but a modified version of it for 6 months back around 25 years ago.

I also did a modified Daniel Fast around 7 years ago. Similar to Keto - stayed away from most grains, ate lots of steak and chicken, ate lots of hummus and carrots. Ate lots of apples and oranges. The fruit is what makes it non-keto I believe?
