I hate to say it like this but it tastes like turtle.
Turtle doesn't taste like anything but itself. So Ill describe it rather than comparing it to another type of meat.

It is very clean tasting with a texture similar to chicken thighs. It is was more subtle tasting than gator, and doesn't taste like chicken.

Serve it in a soup or stew topped with green onions and a splash of sherry!

I have a Jecod doser 5.4 that I am hooking up to the 20g, I know its a cheap one, but if you want to chew me out about going cheap, unlike my Kamoer F4 pro on the 40G , do it in a DM please....lol

A large turtle can have 7 different types of meat (light/dark) its very good, cleaning one up can be nasty, but its worth it
