do you think having two fish will give me nitrates??

yes. fish will produce ammonia which will turn into nitrates as the nitrogen cycle progresses. Your tank looks pretty established so depending on the fish you may or may not see the ill effects of high nitrates.

Of course you will but with proper filtration you should be fine
