Anyone into "healthy" cooking?

Soooo.... I'm looking for healthier recipes that you may have tried that you can recommend. Hubby eats rather fatty at lunch for work, so I try to keep it a little on the light side for supper.

This recipe was awesome.....

--> CHEESE & RAVIOLI with FRESH TOMATO & ARTICHOKE SAUCE <--

This was super yummo. I omitted the oil, as there was oil in the marinated artichokes. I would definitely use artichoke that had water, vinegar and oil in the ingredients and not just water.

Where I didn't add any of the oil. I took a little of the marinade from the artichokes to cook the garlic before I added everything else. I added the cooked ravioli to the pan for the final couple of minutes.

If you want to cut back even further on the fat, you don't need to add the Parmesan at the end.

Do not skip peeling and deseeding the tomato and don't add any of it's liquid into the mix or it'll be too runny.


Do you have a "go-to" healthier recipe to share? I'm trying about 3 new ones a week, so I'm always on the hunt.

That's it I'm driving all the way from Havelock to Kannapolis to go to your restaurant. I've been looking for an excuse to go out way. Haha.

As for healthy recipes we just made a salad with turkey, avocado, bacon, and cheese. Probably negates the healthy part. I have a whole bunch pinned on Pinterest, but never followed through on making any because it would end up on some Pinterest fail website lol
 
Actually, that's exactly what I'm doing... going through my Pinterest board. I like to bake, but the hubby started to put on weight.

My cholesterol level rises just by looking at that....

However, if I ever stop by your restaurant, that is what I will order.

Some restaurants list the calories on the food.... This one will need an extra space 'cause you need more zeros, a few more ... :)
