Aquascaping 180 with live rock

I am going to start aquascaping my live rock today. I have been reading that epoxy can make your skimmer go crazy. I have instant ocean epoxy, D&D and Rock Lock (i think it was that one). I thought it had a stick of Aquastik but couldn't find it last night. My fish are all in a rubbermaid and have been since Friday. It is stressing me out. I want to get them into the new 180 ASAP. Would I be safe to use a couple sticks of epoxy and tub of mortar then add my fish a day or two after that assuming the water has cleared up. All my rock is wet in another rubbermaod except 6 pieces of foundation rock.
 
I glue frags down with the aquasticks epoxy, my skimmer doesn't go crazy. Do you know how fast the mortar dries? Are you taking the rock out to make the aquascape?
 
I finished it. Wasted a lot of money on epoxy in the beginning. I primarily used CaribSea Rock Lock. I have done a lot of tile and grout before so I just had to learn the consistency and set rate. Didnt take long. I used about 4 different brands of epoxy. Not one gave me much confidence. However there is a few joints with it but mostly covered with mortar.
