For a smaller tank what snails are the best to control green hair algae but also reef safe?

It seems they are all listed as eating algae.
None of them really control it. Manual removal is the best option. CuC only bothers with it if it's very short. List above will help.

32 gallon.

Are each of the snails interchangeable or should I target a specific kind in the list?
you can mix them for better results.

for your sized tank here is what i recommend;
1 strawberry/tiger conch or fighting conch
1 turbo snail of your choice (i recommend zebra or mexican)
3 nassarius snails
3 trochus snails
3 nerite snails
3 astrea snails
3 cerith snails

manually pull out the hair algae that is currently there daily/weekly depending how fast the growth is, and introduce the CUC and observe for any die off. lower white light, green light, and red light spectrum to decrease algae growth and properly manage nitrate/phosphate and feeding habits so you can control algae growth even more :). as time goes, you will be able to decide for yourself if you have to increase the CUC

No snails are going to control hair algae. Get a tuxedo urchin.
Control it? No. Manual removal, etc. does that. Keep it in check? Perhaps
Fwiw I have no urchins but my big turbos did work while I was fighting gha; this was overnight
