Heavy question lol. Depends on your ability, and preferences. A cool fish for a 75 gallon is any fish you can happily keep alive:-) I'm a fan of clownfish myself. A mated pair is fun to watch. Singly they host just about anything. Mine has recently taken to a couple of different hairy mushrooms in the tank. (Snugly) they are good eaters and quite peaceful as long nobody tries to take their home that is.

I almost believe it depends on the actual fish. I've seen 3 yellows in a 75 for years with no problem and also a naso in a 120 and it was healthy.

Many wrasses are cool and do well in that size. Marine betta, a group of dartfish, anthias.
